Quick and Easy No-Bake Protein Bars



Ingredients – makes 12 bars:

1/2 cup of protein powder, unflavored, unsweetened     
1 & 1/2 cup of rolled oats, blended into floury consistency    
1/2 cup of cereal, rice crisp     
1/2 cup maple syrup or liquid sweetener  1/2 cup peanut butter (natural) or sunflower seed butter    
3 tablespoons of dark chocolate chips, minis     
1 teaspoon of vanilla extract, pure    
 1/2 tablespoon of oil, coconut
1/4 to 1/2 teaspoon of salt to taste, finely ground          

 Directions:    

 Line an 8x8 pan with parchment paper. Then mix oat flour with salt, protein powder and rice crisp in a medium bowl.     Add the vanilla, nut or seed butter and maple syrup. Combine by stirring well. If your mixture seems dry, add a bit of milk (non-dairy) and remix.      Press mixture into 8x8 pan using a roller, until it is smooth. Place in freezer.      Melt the coconut oil and chocolate chips together on low heat in a medium pot. After the chips are about half-melted, remove from heat. Stir until mixture is smooth.    
   Freeze mixture for 5 to 10 minutes. Take from freezer and then slice it into bars. Drizzle with your melted chocolate. Freeze once more until it has set.
